First time breaking down a side of fish. No scaler, no tweezers, just a crappy department store boning knife and a pretty nice slicer. Man I really need some of that stuff. If you're in Canada Azumatei is having a huge sale on some great quality sushi stuff for the rest of the month, I gotta stock up before it ends

Rice turned out super well today, was pretty easy to work with. 2/3 nanatsuboshi 1/3 hitomebore, awesome taste and texture.
