soy sauce

I have been in japan a while ago, and the soy sauce there tasted super good, way better than the ones i use here in Brazil, in my City there is this japanese fair that sells imported goods. Soo with that in mind i would like to ask for a recomendation on a good brand?

  1. My wife only uses Kikkoman because it’s easy to find in Europe and it’s the real deal. No need to get all fancy with this. 😉

  2. I also use kikkoman since it’s cheap and easily available everywhere. I’m in Europe. I use the one that doesn’t have wheat and only soy beans since I like the taste a bit more. But any of both are cheap and easy to find

  3. Why don’t you just visit a small brewery and offer you one of their bottles? There are plenty of them in Japan in the surrounding prefectures of Tokyo.

    Also, besides the world renown Kikkoman, there is also the smaller brewery Kikkogo in Tokyo, which soy sauce is supposedly milder.

  4. I’ve personally tried quite a few and tend to like **薄口 (usukuchi / light)** varieties better than 濃口 (koikuchi / dark) or tamari when it comes to soy sauce.

    Additionally, try to find one that’s in a glass container and only contains soy (Japanese/国産), wheat (Japanese/国産), and salt as ingredients (no other additives).

  5. I heard the same from Japanese folks here in Brazil. Then I went to Japan and found out that they were exaggerating… It’s not that different

  6. I personally think the taste of soy sauce depends on how oxidized it is. If it’s kept in a non sealed dispenser, the color will get darker and taste will get more intense. Keeping it in a sealed dispenser avoiding touch air will keep the color more reddish.

  7. I’m sure there are specialty brewers, but for easy to find soy sauce around the world then Kikkoman is the choice
