Best apps, and best listening courses

My life at the moment means I'm not committing to a lot of study, I'm not going to use a textbook, and the amount of work I do will vary massively from day to day. I'm a parent, and I have a busy job that varies massively and can be quite unpredictable. Things will change, so I will have a chance to learn Japanese a bit more thoroughly in the future – just not now.

I do, however, have a lot of driving time – at least 10hrs/wk, sometimes quite a bit more. I'm not great at absorbing information when I'm driving because, you know, traffic. Distractions. Whatever. But I have listened through the first level of Pimsleur twice, the Paul Noble Beginner's and Intermediate twice, and am on my second listen through of the 11hr "Japanese Ultimate getting started" from Innovative Language. I've downloaded the rest of the Pimsleur course as well.

Unfortunately, I find I get bored of listening to the same course and start zoning out, so I need to keep switching it up. What other courses are most recommended, that people actually find enjoyable to listen to?

Also, I have DuoLingo, which is great for seeing what I've been working through in the courses written down. It doesn't really teach of course, but so many words I had slightly misheard in the courses I now understand a little better, so that's useful. However, it is obviously very limited! I tried Anki, and honestly, couldn't stick to it. Way too boring. When I read through the past threads, opinions seem to change from year to year about what is the best app/online course to do. What's currently recommended as the easiest to approach, simplest, one-stop-app that people are recommending at the moment? I often have 4 or 5 unexpected 10-15min breaks throughout the day where I will have my phone with me, and would like to sometimes use the time a little better. Happy to pay for the best course.
