Getting a job as shuukatsu visa runs out

I just graduated from my master's degree and I still have yet to get any successful job offers. I know that the shuukatsu visa can be extended up to a year, but in the interest of planning ahead, I'd like to know what the protocol is when you secure a job offer that will only employ you after a certain amount of time.

For example, most companies accept new employees in April. Lets say my shuukatsu visa runs out in September of the year prior, that's approximately 6 months between my expiration and when they will let me into the company proper. I had a friend that had a 2 month period between visa expiration and starting work, and the general "advice" was just to not do anything and see what happens (she ended up moving back to her home country out of her own volition). I'd… like to not do that.

What is the protocol when this happens? Do I just get deported? Thanks.
