Let’s talk about Uni

During the summer, murasaki in the first photo is actually better than bafun uni in terms of sweetness and texture. Cost wise is supposedly cheaper too. Color is whiter than bafun uni but sometimes come out golder. I didn't edit any photos besides cropping.

Bafun uni retains its shape and has a really nice golden color to it. Some companies use alot of myoban to ensure that bafun uni retains its shape during transport. Price during the summer is just as volatile as stocks. Depending on Japan weather, 250g trays can go from $55-100 usd within a week difference.

  1. question. isn’t it cheaper to just buy uni and eat it yourself than get it from a high end sushi place? it doesn’t seem like even the top places do anything to the uni other than serve it directly from the box

  2. I like uni, but not a whole bunch at once. One or two pieces of uni gunkan and I’m good.

  3. If I weren’t already married, I’d propose to your whole seller friend. My god that uni looks amazing

  4. Best uni I’ve had wash fresh out of the shell at a street market in San Diego. I have had uni in restaurants since but it wasn’t as good. I’m not an uni expert but I think freshness makes a big difference.

  5. When it’s good, it’s really good. Most of the time, it sucks. I never get it on purpose.

  6. > Color is whiter than bafun uni

This is why the common nickname is “Shiro Uni.”

  7. I tried uni for the first time recently. I didn’t really like it. I wanted to sooooo bad because this sub made it look so good

  8. I’ve only had it once, odd enough it was in a shot. Can’t remember if it was Saki or vodka.

The chef was amazed at the way I experienced it.
Made me a chefs special plate for free.
Guess he thought I was just an epicurean.
Liked to see people enjoy his creations.

  9. I used to dislike it when I was around 12. I recently tried it again and it quickly became a favorite. The texture and flavor is just so good!

  10. I can buy medicinal iodine a lot cheaper than uni, yet they taste the same.

  11. interesting! i posted trying to learn more about pricing recently

    myoban = sulfur powder?????

  12. I have given it 3 tries and I love sushi but I just can’t get down with it. I love raw oysters and eat clams and mussels but this is just ocean snot……grosses me out and I don’t think I can give it a 4th try. just my opinion.

  13. I feel gaslit whenever I see people fawning over uni because I tried it once and it was literally the most disgusting thing I’ve ever put in my mouth. It tasted like rancid ocean vomit. Never again.

  14. In a landlocked city. So hard to get good uni – and when we do get it, it’s honestly a tossup between a good batch of uni or a bad batch where you immediately spit it out. Not to mention the high price as well.

  15. Uni, in my experience, is like butter or like the Jersey shore threw up in your mouth. Once I was very ill with the flu and my wife went out and brought home sushi including uni which was the latter. I felt better in the evening and had some. Later, I had green NyQuil. Later, I was sick to my stomach from the flu. I believe I’m one of the few people who had the opportunity to taste bad uni combined with green nyquil. I’ll take that taste sensation to my grave.

  16. To me, uni doesn’t necessarily taste bad, but it’s reminiscent of the smell of rubber.

  17. I had it as post of a group of diners at a super high end sushi place in LA. Everyone was raving about how amazing and fresh it was. I couldn’t get myself to enjoy it. It’s like a sock feel into the ocean.
