Major Anxiety planning – I need advice on hotels and a Ryokan

So in October I'm going to Japan for the first time, and I'm EXTREMELY excited!

Editing this post from the top so it gets more eyes, I think now my biggest concern is the Ryokan. Thanks everyone for the suggestions and what not, I've already narrowed it down to just a few choices really!

I want to stay at a nice Ryokan for a night with really nice hot onsen, that's a must for sure, but my partner is insistant on a PRIVATE hotspring as well. I want to (and don't mind spending money for) something with a really NICE private hotspring for our room/available to us, and not just a big tub.

If anyone has any suggestions either near Osaka or Tokyo, would be greatly appreciated!!

We don't have a specific Itinerary but several things we want to do in no particular order.

BUT the biggest thing that is really just… giving me major anxiety (especially the closer we get to the trip) is that I have no idea what hotel and Ryokan to stay at during our trip and I really need to book it sooner than later.

We plan on being there for two weeks, staying in tokyo for 4 days, going down to Osaka for another 4 days, then hitting up tokyo again before we leave.

I think Akasaka would be a good place to stay but I'm not sure, I'm not sure if staying in a Ryokan while in Tokyo or while in Osaka would be better (we're also taking a day trip to Kyoto while we're down in Osaka).

Any and all tips and help would be grateful, for an idea of the kinds of things we want to do in no particular order:

Gundam base/Cafe
A shiba cafe (my partner loves shibes)
various shops of various properties (there's this real cool looking shop in Ikebukuro)
Ryokan obvi
So much food
Visit some shrines
Osaka Castle?

Really we're just gonna GO and have a good time and explore and I will be ready to have that adventure AS SOON AS I HAVE THIS HOTEL SITUATION FIGURED OUT.
