Sushi Umi – thoughts?

I recently booked a dinner in Tokyo in October for Umi (https://sushi-umi.co.jp) and when we booked the Omakase dinner was priced at 53,500 yen per person and I just received an email this morning that they are increasing to 59,500 yen per person (6,000 yen difference). I feel like we should be locked in at the original price (as we have already been charged for it upfront) but now we have the option for a full refund or be charged the remaining difference.

We wanted a special occasion type place/omakase dinner while in Tokyo as we are traveling for our honeymoon, but wanted to see if others say to go for the experience or is there somewhere else we should be going for now $400+ USD per person? Originally I chose this over other more expensive options because of word of mouth. We ideally were trying to keep it under $400 per person for this meal.
