How much can I expect to spend from Nov 5-16 in and between Tokyo and Osaka?

I don't drink, party, or engage in nightlife. My typical daily routine includes two big meals and 1-2 snacks or smaller meals, similar to what I eat at home. I enjoy sushi, tamago kake gohan, pasta, curry, soups, and pizza. I don't eat meat, but I love tofu and have already mapped out recommended plant-based restaurants in the cities I'll be visiting. I'm also a big matcha lover. For context, a big meal for me is equivalent to about two sushi rolls and a U.S.-large drink. If you're familiar with Café Rio, a vegetarian burrito split in two is enough for me for a day, plus a snack or two in between.

I'll be in Tokyo from November 5-7 and 14-16, and in Kyoto and Osaka from November 7-14. I'll travel between Tokyo and Kyoto by bullet train and plan to commute within each city like everyone else. I'm very active and athletic, so I might look into renting a bike or using my freeskates for shorter distances. I typically ride my road bike 30+ miles a day or my skates for 5-8 miles at a time.

Some places I plan to visit include TeamLab Planets, Universal Studios Japan, Tokyo Joypolis, Shibuya Sky, Tokyo Tower, several shrines and temples in each city, and perhaps a furo every other night. I'm also interested in exploring popular shops recommended on social media for foreigners. I'm looking to pick up a couple anime-themed shirts, pants, or hoodies, maybe some figurines, and I'm hoping to find a good photography camera and/or a Nintendo Switch at a reasonable price. I might spend an extra day at Universal and am considering visiting a city or town further west, though I haven't decided where yet. I love heat, nature, greenery, mountains, and water, though I prefer lakes and rivers over oceans (too many shark movies 😅).

I'm traveling with a 35L Cotopaxi Allpa and packing a 20L backpack as a backup or for day trips. Depending on what I buy during my last couple of days in Tokyo, I might fully stuff both packs.
