‎日本語の上手な人

1.First Question:
Why is "の" used in a sentence like "日本語の上手な人"? What’s "の" doing to connect "日本語" with "上手な人"?
2.Second Question:
I saw someone say "日本語上手" without "の". Why is "日本語上手" right without "の", and why isn’t "な" used? If you drop "の", do you also drop "な", and how does that change things compared to "日本語の上手な人"?
3.Third Question:
Why does "の" turn a verb or noun into an adjective, like in "日本語の上手な人"? How does "の" work in this case, and what’s its role in the sentence overall? Also, I’ve seen something similar, like "絵が上手". Why isn’t "な" used here, and why is "が" instead of "の"? Does this have to do with using "が" in subordinate phrases?
