Japan doesn't have a shortage of great bars, especially Tokyo. Many of them you have heard of before and will be lucky to get a spot at with a week/month in advance reservation. However, there is one place I stumbled upon which I haven't seen in any of my research yet, and I really believe it is worth your time.
Bar Vie Lembranca in Minato an establishment created by a person fully dedicated too and in love with the craft of mixology. You will see it from the first second you step in, the place is fully stocked with liquor options on one side, and 100s of ingredients (powders, mixers, liquids, drops, extracts, ets.) on the other, all of which by the way are home-made and unique to the place. There are only 5-6 seats at the bar, which allows for every lucky visitor to receive proper attention and a beverage based on their preferences and today's mood. There is no menu, there are no "signatures", there is just the magic of the craft.
After telling what you are in a mood for (can be a specific drink or taste you are looking for), you will find yourself mesmerized by how masterfully and elegantly your beverage is being prepared, as the many doors are opening up from which the maestro is pulling the ingredients you've never heard off before. 5-7 minutes in, and it will be served to you on a plate with a little bite which is worth to share the company of your beverage and yourself.
The beauty of the cocktails for me was – how incredibly complex they are from the first sip, yet easy and light to enjoy. There is a lot of everything, and yet not too much of anything.
3 drinks and one hour after, you will find yourself sitting there with a smile and wondering when is the next time you will come back and how you will share this experience with your friends back home.
