Did you do anything to marinate/season the tofu? I’m curious because whatever I do, I have issues with it sticking properly to rice. (Or maybe it was the type..? Did you use soft or firm tofu?)

Macadamia nuts and pine nuts are good for vegan sushi’s. This is also where I would add shiso and some sweet peppers

Looks great, the mushroom, spinach, and sesame seed def are must fillings for me when I’m making gimbap (Korean futomaki)
