Best non-omakase Sushi restaurant?

Hi all,

Unfortunately my wife is quite picky in choosing her food, so whilst we would like to try "good" sushi, most of the ones that are considered good, only offer omakase meals and we don't want to offend anyone by not eating a specific sushi.

Do you have any suggestion to try some good level sushi?
