Next to Takoyaki, I think yakisoba maybe my second favorite Japanese street food. I’ve been working on a homemade yakisoba sauce for a while, and I think I’ve nailed it. 2:1:1:1 ratio of ketchup, oyster sauce, soy sauce, and Worcestershire. The other trick is to use a large pan over high heat to get a bit of char on the noodles/veggies/meat.
