Moving to Japan as a 26 year old specialized german Hotelwaiter. Tips?/job chances?

Hey Guys
I wanted to ask if there is anyone here who could tell me how good my chances are of getting a job as a specialized Hotelwaiter on the Japanese job market?
I'm currently 24 years old and have completed my 3 year long training as a specialized Hotelwaiter here in Germany.
It has always been my dream to move to Japan.

My original plan was to redo my high school diploma and then study something in IT so that I could then move to Japan. However, I would be 25 when I start my studies and 28 at the end, with little chance of being accepted by a company/ let alone of even passing it as a whole due to the 50% failure rate.
(and if i would fail, i would be in a lot of debts and any chances of fulfilling any dream of mine would be crushed)

That's why I'm planning to abandon my high school diploma after a week, earn money as a hotel waiter for 2 years and then be able to move to Japan with around 25,000€ to 30,000€. At the same time, I would also take Japanese courses at a public school. So i wouldnt go there without any knowlege of the language. (Im planing to hafe a good grasp of the language befohre i go there)

About my motivation:
I have already vacationed in Tokyo bevohre on my own and immediately fell in love with the country.
I am familiar with the difficult working conditions. But im higly motivated to make that step.
It would be great if anyone here can Tell me about his/heres expiriences in regards to that topic.
