Not all of the fish or pieces but I was working and relied on my guests for photos.

  1. I did hokkaido murosaki AA uni, o toro, chutoro, salmon belly, royal osetra caviar, kaluga hybrid caviar, A5 Miyazaki Wagyu a variety of ways.

  2. Your dinner is confusing, looks impossible to eat with sticks. Do you use a fork or a spatula to eat it?

  3. More is not always better.
    Your drumsticks look gorgeous.
    Why put osietra on top?
    Osietra in good quality needs nothing else.
    They way your drumsticks look, they wouldn’t need anything else either…

    Good cuisine is not mixing the most eclusive ingredients together.
    It’s a matter of taste.

  4. Looks absolutely fantastic!! Love that uni and caviar – superb! Personally, I like my sushi rice a bit more vinegared so that it has almost a brownish tint if that makes sense, but otherwise, top notch. I bet it was as fun sourcing the ingredients and preparing it, well, almost as fun as eating it. 😉

  6. Looks great OP. Love the uni. Id skip the jalapenos (and I like them) but not with fish but maybe that’s just me.

  7. Do you have a recipe for those crispy rice patties? I haven’t had the best luck making them at home.
