Went to a Japanese restaurant today, the shrimp tempura sushi roll looks a bit … undercooked. In the second pic, I pulled the shrimp out to look at it closely. The wait staff said it’s grey like that, because it’s lower quality shrimp.
I still think it is not fully cooked. What do you guys think?
