First timer. Itinerary check and some questions

Hello!
After some research I've come up with this itinerary. I am looking for a relaxed chill trip, I'd prefer to enjoy things and not stress the trip cramming activities. Mi girlfriend and I are most into art and culture than urban / otaku stuff in this visit. Please, I'll appreciate any corrections on it and tips. I already have the plane tickets, I've got them months ago, so that I can't change, in retrospective maybe had been wise to get the departure from a different airport.

Also, I plan to spend a night in a ryokan and try the onsen, it is hard to find one that accepts tattooed people? How would be the best way to check if they accept tattoos there?

Aaaand, just wondering, in this itinerary, when do you think would be the best spot to propose?

All tips and suggestions to change things up would be appreciated!
