1. She’s making pickles. If you turn on the closed captions, she’s explaining.

2. It’s nukazuke, rice bran pickled vegetables (in this case cucumber). Rice bran, salt and sugar. Veg goes in and ferments, and gets eaten.
   The pickling mixture gets used over and over, and develops its own flavour profile, kind of like a sourdough starter.
