where to get chef knives that are unique to japan?

Visiting for the first time next month from the US. The tip includes Tokyo, Sapporo, Osaka, Kyoto, Nara, Kobe, & Hiroshima.

I want something special that I can’t easily buy online while in the USA.

Also open to other items that are Japan-exclusive.
