Im a bit intimidated by the booking process and the retrieval of the pass so I was wondering which method/page was the most hassle free: the official JR west website or klook. What has been your experience?

I was able to buy it in the Kyoto station last week. A small JR West desk, right in front of the ticket office. Bought it in the same day I was going to use it without problems.
So if you will be in one of the big stations e.g. Kyoto, I would just buy it at the counter

Everything works.
I bought mine with klook, because they had addons and free esim data. I used them all.
You just go to the station kiosk and you can turn your klook voucher into a pass.
