Is it important to learn the numerals? Im will stay in Japan for 1 year and when im going to a Cafe im asking myself is it not ok to just use 一つ? Sounds it that weird to Japanese people, when i use the つ version on animals, or cars?

Sounds like your course sucks. What are you using? Does it not have explanations?
They are virtually identical.
です sometimes stands in when there’s not too much work to do OR to make an otherwise casual expression more polite.
Position words provide a lot of information, so です can stand in there.
Or, the speaker could be amending an otherwise casual phrase or for ease:
A: えきは どこですか。(えきは どこ？)
B: あそこ です。(あそこ。)
Are you sure you didn’t mistype? “Doko ni arimasen” is not grammatical.
Like someone else said “doko ni arimasen” doesn’t make sense. If you meant “doko ni mo arimasen”, that does not have the same meaning, but if you meant “doko ni arimasu ka” then the meanings are pretty much the same.
