Butayama, in my opinion, is one of the worst Jiro inspired bowls you can get in Japan. It’s just not good, in comparison to literally any other shop that does Jiro inspired bowls.
Mind you, it’s not a bad bowl overall or bad food. But I’m definitely never wasting a day’s worth of stomach space for a bowl from them.
Butayama was the last pop-up at Ramen Lab in NYC before it closed. I thought it was pretty good, though I admittedly haven’t had much Jiro ramen.
