My friend and I have a private teacher once per week. We are both N4/N3 level and especially weak at speaking. Our teacher is a Japanese man who is teaching as a volunteer, so not a professional teacher. I’m looking for suggestions for books or other resources that we can use during our lessons, to improve speaking ability.

The only way to improve speaking is to speak. Books won’t help.
You could switch tutors. I tutor students both online and in-person and we focus a lot on speaking. Of course, it all depends on the curriculum you use. The one I use is great for getting people to speak. There’s also teachers who just choose to “teach” by simply conversing with the student. That’s an option too
The fastest way is to learn word chunks from natives and then change/combine them to fit your needs. You could also try shadowing
Without a tutor:
* shadowing
* reading aloud
With a tutor:
* making presentations
* conversations on specific topics known beforehand so you can prepare for that before the lesson (like learn some vocab etc.).
Writing helps with speaking as well.
