  1. Niboshi Chukasoba Suzuran (煮干中華そば 鈴蘭 新宿店) is a niboshi ramen specialty shop with quite a few unique and interesting ramen bowls on the menu. Some people claim it is a must try for niboshi lovers in the Shinjuku area.

    I went for their, in my eyes, most unique ramen bowl. The soup of that ramen bowl is made with charcoal grilled mackerel niboshi, which gives the soup a nice smoky and grilled flavor. You can really taste the grilling action in the finished bowl. The rest of the bowl is as high class as you would expect of a ramen shop from the Hayashida group. Perfectly executed sous vide chashu is flanked by chonky and crunchy menma bamboo shoots. The egg is also well marinated and on point in terms of consistency. If you’re a fan of mackerel, then this bowl is definitely for you.

    Personally, I was quite surprised by this bowl and the ramen shop itself. I think it belongs on any ramen lover’s to do list for Shinjuku.
