Bought some type of specialty miso from Okinawa – does anyone have vegetarian recipe suggestions that will highlight the flavors of this miso?

  1. Miso soup made with a vegetarian dashi… That’s about as pure a representation of the miso’s flavor as you’re going to get.

  2. Make a marinade for grilling vegetables or roast veg on high heat. Also use for carrots with honey.

  3. Miso marinated grilled eggplant.
