Ordered a veggie bowl from a Japanese restaurant, delicious and am really loving this vegetable (whatever it is, the one im holding up with the chopsticks). Can anyone help me with a name? Dish lists ingredients as cucumber, mix leaf, cabbage, edamame, toasted kale, mushroom crisps and nori flakes
The closest thing in this description is mushroom crisps (it’s very crispy) but this thing looks nothing like any mushroom I’ve seen

These looked dried (could have been fried).
Raw lotus root is very sticky and a bit difficult to handle.. if you could get ones that are already peeled and preserved or just dehydrated ones those would be ideal! They make great chips, side on to dishes, also taste good with rice or in teas.
Renkon! It’s one of my favorite vegetable here. Has it been fried or dried in some way? I’m sure it’s still delicious but fresh lotus root is the best.
I love when it has been pickled. I miss watching it getting harvested from the swamps.
