Tips for Speedrunning Cali Rolls? Novice Pro Sushi Cook.


What are the tips for making Cali rolls fast? I’m making 100s of em 6 days a week.

Ingredients used.

Calrose rice

MD 43 sushi vinegar

Standard half cut nori

Kani meat ( imitation crab, we add mayo, NOT the Stick meat type)

Avocado

Topping is Tobiko

One of the methods I’ve seen used by a co-worker is to use up an entire table and wrap it with food film. Then spread sushi rice on 60 nori then go through the steps on all 60 rolls on the table. This co-worker rolls cali without the use of makisu

Another method is one at a time in a speed challenge Hiroyuki Terada. He rolls the cali with makisu and does one at a time. About 1min per roll. He uses different ingredients though.

The sushi chef in the kitchen says he has seen a guy do 16 cali rolls in 11 min (41 sec per roll) about a decade ago. Using the same ingredients we are using.

Currently using a standard stainless steel kitchen knife. Currently using standard sharpening rod to sharpen.

Do I need to sharpen on wet stone?

Do I need a specialty knife?

Should the rice be hot? or warm? if so how many degrees?

Let me know any tips or changes to ingredients or tools or even simple things not necessarily directly related like non slip shoes or temperature of the room etc.

I work for a commercial ktichen that gets sushi orders by an app. Every day I’m rolling 100s upon 100s of Rolled sushi, Cali, Veggie, Maki, even Tuna and Salmon rolls.

I am at a Novice level. Only 3-6 months. (3 of the months were years and years ago at a japanese fast food place)

I have been back into making sushi and getting paid for it last 3 months and change.

  1. in hiros speed challenge video example you used, he could cut a lot of time out by working in parallel rather than in series.
    as in he is doing one roll at a time and that adds extra time in picking up stuff and putting it down, if he did 5 rolls at once he would be saving picking up and putting down the knife , mat and sesame seeds 4 times.
    also could save time picking up fake crab and avocado in bulk instead of for each roll going back and forth.
