How do people go from work visa’s to business manager visa’s in Japan? How do they begin setting up a business so that they can apply for a business managers visa, when I thought you weren’t supposed to do any work that isn’t for the company your visa was sponsored by?
Any anecdotes on how people got their business set up in Japan while initially on a work visa would be great!

The restriction is against the type of work you do, not who you’re doing it for. Even with that, you can request permission from immigration to engage in activities outside the scope of your status of residence.
