I’ve been going through fire emblem fates as my first game in Japanese. I’ve been playing it on my own 3ds and I’ve gone through the first three chapters writing down every single sentence in my playthrough on a Google doc. But it’s taken me two days to do so. Is there any way I can get through the game faster while making sure I’m still learning?

Personally, I just look up the words as I go and that’s it.
No writing.
The core vocabulary of the game will repeat itself. You may have to look up the same word a half dozen times, but eventually it will stick and you’ll be reading more than looking up.
Don’t worry about forgetting. It’s all part of the process. And don’t worry about the words you see once or twice and never again. The important ones will always come back.

It’s apparently “[notoriously difficult](https://www.techadvisor.com/article/729602/how-to-screenshot-on-nintendo-3ds.html)” to pull off on a 3DS, but one thing I do when immersing with games is to take screenshots, look stuff up on the spot using a dictionary with custom word list support (something like Yomiwa on Android and Shirabe Jisho on iOS; really handy for tackling multiple games concurrently), and then make Anki cards after I’m done with my gaming session when I’m closer to forgetting what a given word means.
I’d say don’t write nothing down. Just look it up and keep going. The words are gonna repeat its self through different context
I would just keep this same pace if you enjoy it since words will repeat and you’ll get faster
