So I was looking for easy to read materials on the internet and found Crunchy Nihongo.
They basically offer free learning materials for all levels. For example as hiragana reading practice they made pdf files for a few popular Japanese folklores where it’s separated by segments\\chapters and write the Kanji as hiragana so you can search the word meaning easier if you don’t know the meaning.
I enjoy their content a lot and want to give my recommendation.
The only downside is that their website is heavily monetarized by ads but if you find something you are interested you can always just print it to pdf file and go over it
