Bday Sushi plate for the homie


Birthday plate I made for one of the Chefs at a place I worked at previously. From the top it’s Akami tuna with nikiri soy and fried shiso, then we have seared akami tuna with fried shallots and scallions with ponzu, 2nd row is hamachi with jalapeño and red yuzu kosho, then salmon with a garlic miso aioli and scallions, next to that is seared salmon belly with ikura shoyu zuke, last row we have a salt and vinegar cured kohada braided nigiri, then we have chopped o-toro with nikiri soy, and grated dehydrated cured egg yolk, next to that is a toro nigiri with nikiri soy, osetra caviar and lemon zest, lastly we finish with a slow cooked(slightly well done 😂 )tamagoyaki.

    I now have new expectations.
