[Ramen Kawashin (らーめん 川しん)](https://youtu.be/C-CKwTWYeH4) is an old school ramen shop in Shizuoka and a favorite among the locals, either during daytime or after a good night of drinking.
It is run by the owner himself and offers a variety of ramen dishes, as well as fried rice and curry. But what really draws the people in is the famous miso ramen.
The soup base at Kawashin is a clear tonkotsu pork bone broth, which you can actually try by itself when you order the miso ramen, since the miso does not come already mixed into the broth. Instead, a heavy helping of mixed miso gets heaped on top of the bean sprouts in the center of the bowls, which makes the bean sprouts disappear completely. The miso itself is quite intense, definitely a mix of various miso types. Once mixed into the soup, it creates a rich, salty and very aromatic experience that works perfectly with the thin and classic noodles. Just like the rest of the bowl, the chashu is also quite classic and fits great to the impactful soup. The serving of ramen noodles is very generous, thin classic style noodles that match the overall theme.
