And it had a lot of Kanji that weren’t in this list:

Will the n5 actually have passages this difficult? And will the readings be provided above the Kanji?

There is no official kanji list. Any site claiming that is lying. My guess would be that you should be fine knowing around 80-120. I wouldn’t stress about it though and just pick up words when you encounter them. For learning purposes you could still use these “kanji lists”.
There might be words above N5 level but those are generally explained/translated below the text.
