I’m a native Spanish speaker and fluent on English. However, I’ve recently started learning Japanese, BUT after doing around 2 months of Duolingo I decided that in order for me to learn i would like to have a more hands on approach (since I learnt English that way and it proved to be the best for me). Sadly, I’ve struggled a lot trying to find Japanese people to talk to in general. I’ve tried Quora JP, playing videogames in Japanese servers and finding people to talk to, but still no luck. I don’t really know where else to go and thought to give this a shot. Is this the way to go? Help or any advice for that matter would be very much appreciated.

italki for paid conversation partners. Much more reliable than Hello Talk.
Italki.com and find a (paid) tutor. Or try with HelloTalk. Although I didn’t really have much luck on conversations on HelloTalk, I use it for writing and getting corrected.

Amino, it has an language exchange community and a few others for learning Japanese and some learning Japanese for native Spanish speakers as well that are decently active. Everyone in these communities are very nice as well and more than willing to help and practice speaking different languages. Especially Japanese and Spanish
