My Black Pearl special


Special I’m running right now at work. cucumber and tempura shrimp inside. Salmon, and my black garlic sauce. A quick bake with scallions and sesame seeds to finish.

  1. mix the rice with active charcoal or cuttlefish ink, then top it with black pearls made with soy sauce and dashi gelled with agar agar in cold oil instead of the spring onion.
