Another great episode! When I saw you add the umeboshi, I was like “NO! IT RUINS IT! *gollum, gollum*” but now I really want to try this.
Excellent as always. I do have a question though, I have never tried hotate at home due to really not trusting even good scallop sources. I make scallops seared all the time but unlike with fish, I am not sure how to select scallops that would make good nigiri.
Any tips?

Love the content and I always rewatch on YT. I do think you should order your top 100 greatest hits off your 1-10 scale so we really know what the best piece is.
