You’d know if it was off. It tastes like gasoline when it goes bad.
Uni is not supposed to have a bitter after taste. This doesn’t mean that it wasn’t fresh it just means that the one you got was not eating the right kelp or didn’t get enough nutrients. If you try uni from Hokkaido or from San Barbara when in season the uni will be creamy and sweet. No bitterness. I would suggest you give it another try and not rule it out.
