What honor tag do you use for your boss? San seems too weak. Is sama appropriate? Like if your boss is Sakura Rambo for example, you would say Rambo-sama?
Usually you call them by their title. So 部長 *buchou* would be your department head, 課長 *kachou* would be your section manager…
Nope. San is what you want to use, it’s perfectly appropriate. Sama would get you some weird looks haha.
Or as the other commenter said, by title is also acceptable (tho I feel like that’s more of a “traditional/conservative Japanese company” kind of vibe, so there might be some more modern/casual/international kind of offices where that would feel out of place)
