Great tsukemen in Urawa, just North of Tokyo at Kingyo

  1. [Chukasoba Kingyo (中華蕎麦 金魚)](https://youtu.be/QVGcg3B7uog) is a tsukemen style ramen shop next to Kita-Urawa station in the South of Saitama prefecture. They serve a modernized version of Taishoken style tsukemen and ramen.

    The soup is a classic pork broth with distinct niboshi dried fish notes, which result in a slightly sweet and acidic soup with smoky notes, but not an overly strong fish aroma. For my taste, I like this style a bit more sour, but luckily there is vinegar on the counter, so this can be fixed individually.

    The noodles are really good and fit well to the dipping soup. They are more firm compared to the Taishoken originals.
