Quick background info: I am currently in Japan or WHV, have been offered a job with visa support (turism industry) starting mid-April. I know I need to leave Japan and go back to Europe to get my visa in my home country. As I have previous commitments in Japan until beginning of March, that gives me a narrow window to return to Europe, apply for the visa, sort out personal stuff for more long-term stay, and fly back to Japan.
I understand COE processing time can differ and is generally said to be 1-3 months and I need to enter Japan within 3 months from date of issue. I’m trying to figure out the best timing for the company (a hostel chain) to submit COE application to minimise the risk that it will arrive too early or too late. So far it seems like it would be best if the aplication is made around mid-December?
I suppose I have the opposite problem to most people 😉 Given that the company can apply as soon as I ask, I am trying to figure out timing and wondering if I should be worried about the visa being processed too quickly (less than the 1 month they suggest is usually minimum). Has anyone here gotten their working visa very quickly? Should I not be worried about that too much?

You are way overthinking this.
Have the company submit your COE application immediately. You have three months from COE issuance and then an additional three months after your get your visa in your passport to get everything done.
