For anyone that has applied for a working holiday visa, how long did the whole process take?
I want to book a flight for Japan leaving on the 8th of december, but the embassy’s website says 10 working days to process, which would be risky if leaving on the 8th.
This is for the Japan embassy in Wellington, New Zealand if anyone has specific experience applying there.
Is it worth the risk to book the flight now and hope I get the visa in time?

I would strongly recommend waiting until you have the visa in hand before booking your flight.
