I finished memorizing all letters of katakana and hiragana and also been practicing reading some words on youtube from japanesepod101 and some youtube pages that has 20 word quizzes. after that, I tried memorizing some kanji but looking at all the stroke and complex letters I decided to stop for a while. what should I do before going kanji? Thank you!

I would recommend some structured learning to start the long journey. Maybe a textbook that will feed you grammar, review and vocab in portions that build on themselves.
