I’m visiting the US for the holidays and am really tempted to get a new iPhone while I’m here. I have a Softbank contract already using a physical sim card. If I buy the new phone, I’m going to run into problems settting up the e-sim? Do I do it myself, or do I need to risk asking Softbank (who may say no since it is technically illegal)? I have no experience with e-sims. Thanks.

It will probably cost something to “reissue” esim from physical sim. Of course, you keep existing phone number.
