Homemade umeboshi (pickled plum) and SPAM musubi with umeboshi furikake 🍙 Very easy to make, and recipe in the comments~

  1. **Ingredients and Equipment**

    1. One can of SPAM (either regular or low sodium)

    2. 8 to 16 soft umeboshi depending on how much ume flavor you like

    3. Furikake (ume flavor is preferred, but really any will work)

    4. Four large pieces of nori

    5. Approximately six cups of cooked medium or short grain white rice (do not use long grain rice, wild rice, jasmine, etc.)

    6. SPAM musubi mold/press or washed empty SPAM can

    **How To**

    1. Cool the rice till it is comfortable to touch. You don’t want it to be scalding hot straight from the pot.

    2. Cut the SPAM into 8 equal sized pieces, and fry in a pan till nice and crisp on both sides. Take off heat.

    3. If the umeboshi has seeds, remove the seeds till you have a pile of deseeded ume.

    4. Turn a stove burner to the lowest heat and pass each sheet of nori over it a few times to crisp it up, and then cut the sheets in half.

    5. If you are using a SPAM musubi mold, place a sheet of nori on a cutting board, and place the mold on top. Add a little more than 1/2 inch of rice and then press. Sprinkle furikake, and then layer the ume and a slice of SPAM on top. Add another 1/2 inch of rice, and then press. Remove the mold and wrap the rest of the nori around the musubi.

    6. If you are using the can, place a place a sheet of nori on a cutting board. Fill the can with a little more than 1/2 inch of rice and then press down with your fingers or small spoon. Sprinkle furikake, and then layer the ume and a slice of SPAM on top. Add another 1/2 inch of rice, and then press down again. Flip the rice and SPAM mixture onto the nori and then tap/squeeze the can till the musubi pops out. Wrap the nori around the musubi.

    7. Eat!
