Japan tax on part time works

I want to know how do they tax on part time works and how they know that you are paying tax ?? On which papers do they take as proofs that you are paying tax? I heard that some restaurants don’t take personal documents except zairyuu card .Do they submit taxes with our respective zairyuu card numbers??
