  1. Overall presentation I like. Cutting down the bamboo leaf is a good, I would’ve cut it with a curve instead of right through the middle, try to keep that leaf feel. Other than that I can only say the quality of the tuna and roe dont seem so great. As sushi chefs we work with what we have, and this would be fine to feed ourselves or staff. But when serving guests, you have that judgment call to make. I wouldn’t sent that to a table though myself.
