I was gifted 2 packs of sashimi grade salmon. I had the 1st pack in refrigerator overnight and cut it. The texture wasn’t too bad but it tasted a little bit fishy, not similar to the one I bought from HMart. The 2nd pack is still frozen so I don’t want to ruin it. Any advice?
put on dip tray or some kind of drainer in fridge overnight.
fatty fish is very good when miso marinated!?
use things like ginger , lemon , lime zest juice to minimize fishy taste
in holland we have it fresh at kingfish zeeland much better and its farmed taste totally different.
option 1: leave the pack in the fridge to defrost overnight, it should be soft enough to slice in the morning
option 2: if you need it within the day, take it out of the pack, rinse in lukewarm salt water (a little sake if you want) for around 30 secs, then pat dry with paper towels. wrap in new paper towels, set on a plate in the fridge. it should thaw quickly without the fishy smell

I checked Japanese site to find out the best way to thaw frozen sashimi.
1. Thaw it in ice water for one to two hours.
2. Thaw it in salt water (2 tablespoons of salt in 1 liter of water). It takes much shorter time. 1 liter is slightly more than 1 quart. You need to rinse with cold water and pat dry with paper towel.
3. Thaw it in the fridge for 5 – 6 hours. Maybe you kept your salmon in the fridge too long last time?
I’d rinse it with cold water and dry it with paper towel in anyway. I buy my salmon from Sam’s (they sell sashimi grade salmon for the fraction of the cost compared to fish stores) and thaw overnight. Mine is usually still frozen partially when I slice it.
Two options
1.thaw under refrigeration
2. Thaw under running cold water
Slow thaw in the fridge anything else will ruin it
You have 2 options, leave it in the fridge and wait usually couple hours …. Or run it in the bag under cold water in a container the size of the fish and it’ll defrost and be tits in about 30- 1 hour
1. Heavily salt room temp water. 2. Place frozen fish in water for 1-2 minutes. 3. Rinse fish and dry with paper towels. 4. Rap in paper towel and place in fridge until thawed fully.
