Itinerary Suggestions 16 days in Japan

Hello everyone,

I wanted to get some thoughts on a rough itinerary I am working on. I am traveling with my gf to Japan in late May. This will be my fourth trip there, including a few months I spent studying while this will be her first trip. We enjoy food and particularly want to try some regional foods, the arts, culture, quaint towns, nice walks, and temples.

The actual days I only have a rough idea of but any suggestions would be greatly appreciated, particularly any little known places in Tokyo, Kyoto, Osaka and Nara or attractions that may have opened in the last five years or so.

One potential area of concern is having enough time in Takayama and Kanazawa.
