Can anyone recommend good courses or resources (cost does not matter) that can catalyze learning Japanese in 1 year. Ideally reading and writing at an intermediate level.
I’m sorry, but I think one year is too ambitious to get to an intermediate level. Especially achiving an intermediate writing level.
The timespan Isn’t necessary. Language learning takes time, so I’d say just get a few resourses and have fun with it.
Personally, I’d recommend first just “trying out” the language on an app like duolingo or something simular to that (although I don’t recommend using those apps down the road). After that, consider getting yourself a textbook like JFZ or Genki, Tae kims guide is a great resource for grammar, and Anki is a must use for me.
What does learning in one year mean? Like fluency? There’s no way that’s happening unless you’re a savant. It takes a long time to reach that level with daily practice
If you have prior experience with Chinese and/or Korean, you may be able to make quite some headway in Japanese within a year. But coming from a Western language, you’ll probably at most get to a level where you can hold a simple “Hello, my name is” level of conversation within a year. Best of luck with it though.

Starter’s guide should get you going. 1 year’s gonna be tough though.
