Question: How to select fish


Hey guys, I got a job this year that on a daily basis leads me past a market where fishermen dump their catch. Seems like a great opportunity to grab some awesome ingredients for some homemade sushi. I just wondered if you peeps have some tips on questions to ask and things to look out for.
Bonus points for cleaning, and knife suggestions.
